Made with the well guarded "secret Auricchio Extra-Sharp rennet," Auricchio provolone is seriously sharp and one of the world's most famous and favorite cheeses. Though aged for three years it maintains a surprisingly creamy texture.

The Story

Since opening its doors in 1877, not much has changed over the last 140 years. Each form is still made by hand utilizing a secret rennet recipe specifically designed to bring the pain. Though mostly employed as a 'snacking cheese,' Auricchio provolone is a workhorse of the kitchen. It can be eaten as is but can also be shredded, breaded, baked or fried. Delicioso!
