The Flavor Experience

Carm is one of our stronger olive oils but is so very well-rounded. It comes in smooth and buttery with notes of green apple, arugula and artichoke. A rare and robust oil not dissimilar to specimens from southern Italy, is complex — colored by hints of fruit as well as peppery layers on the finish.

The Story

Carm's owner Felipe Madeira was a medical student in Italy when his family would visit and inevitably bring some olive oil with them. Felipe's friends requested it so much that he made the decision to return to Portugal, open a mill and sell the olive oil his friends so loved. We think you'll love it too.

Usage Tips

The soft but spicy finish of CARM lends itself well to super rich cheeses. Try drizzling some on our housemade burrata or a little slice of Casatica di Bufala for a delicious study in contrasts.
