The Story

Dick and Helene Willems arrived in Ireland in the late 70's, having left their native Holland. Sourcing milk from a local herd of Holstein-Friesian cows, their production mirrors a traditional Dutch Gouda style, resulting in deeply-flavored specimens shipped around the world by Neal's Yard Dairy.

Coolea is made by Dutch immigrants to Ireland, combining some of the best milk in the world with one of the superior cheese making techniques. This mature beauty has hints of hazelnuts, butterscotch and honey, but is not quite as sweet as most of the Dutch Gouda.
