The Story:

 Two French chefs, globe-trotting adventurers who met in Africa, dreamed up a Parisian-style charcuterie shop in New York City's vibrant Village. With the support of an American investor – their "third pig" – their dream became a reality.

In an era when French home cooking was still a novelty in the US, the 3 Pigs quickly gained acclaim. Endorsements from culinary luminaries like James Beard, Mimi Sheraton, and Craig Claiborne catapulted the shop to success. Their commitment to traditional French charcuterie, "back to basics," resonated with discerning palates.

Recognized for their exceptional quality, 3 Pigs charcuterie began winning awards from the Specialty Food Association. This success inspired a shift in focus: to close the shop and dedicate themselves to producing and distributing their beloved pâtés, mousses, saucissons, and other French delicacies across the United States.
