Named for the rocky shores of Lake Champlain, Lake's Edge Mini brings all the drama and elegance of Blue Ledge Farm's most iconic cheese into a perfectly portioned 10 oz wheel. Made from 100% pasteurized goat's milk from Alpine and La Mancha herds grazing the hills of Salisbury, Vermont, this is a cheese with a story written right through its center.

A delicate, snowy-white bloomy rind gives way to a paste that's delightfully chalky when young, developing a luscious cream line just beneath the rind as it ages. Running through the heart of the wheel: a pencil-thin wisp of food-grade vegetable ash — a striking black-and-white contrast that's become the cheese's signature. Bright and tangy with a clean goat-milk finish and a subtle earthy musk from the ash, it's as stunning on a board as it is on the palate.
