The Flavor Experience

One of the most ebullient cheeses gracing our cheddar shelf, Lincolnshire Poacher sets itself apart from its west country brethren by exhibiting a nutty quality usually associated with Alpine cheeses such as Comté. That rich nuttiness is in turn balanced by a unique tropical fruit finish.

The Story

Simon Jones of Lincolnshire Poacher is the fourth generation to run his family's farm and has been making cheese since 1992. He consulted with Welsh cheesemaker Dougal Campbell who came with years experience making cheese in the Swiss alps. The influence of those Alpine cheeses is evident in Poacher, whose nuttiness and buttery quality call to mind Gruyere or Comté.

Usage Tips

The Poacher is a pretty great dinner guest. Goes well with wine (bordeaux), beer (stout, IPA) or whiskey (scotch, rye). Lovely with some Apricot and Orange Chutney from Blake Hill in Vermont.
