Normandie Brie was developed for the US market. The goal, before the final recipe was decided upon, was to create the traditional, soft cheese characteristic of the region, while upholding the FDA guidelines. To be sold in the US, a young cheese like this one would have to be made from pasteurized milk, so producers developed a gentle pasteurization method that would comply with our food safety guidelines, but without sacrificing the distinct flavor of the cherished Normand milk.

The Story

They don't just speak French in Quebec! Our friends North of the border at Eiffel Tower produce French-style cheeses using high quality Canadian milk. This brie is made to a 40% minimum butter-fat content, making it creamy and versatile.

Usage Tips

Mild and buttery, this friendly Brie is delicious paired alongside a tart jam, sweet honey, or  fresh sliced fruits. Looking for something savory? Bake a wedge in pastry and generously top with our own Black or White Truffle Cream and some fresh chives. A super-simple stunner of an appetizer! Keeping it casual? Try a grilled cheese or turkey sandwich warmed and pressed 'til gooey with this cheese, and maybe a slather of DB's own fig jam or some Edmund Fallot mustard.

Pairing Tips

Easily cut into long slices, Brie is just the thing for sandwiches built on long baguettes. Do it the right way and have a good French butter on there, too. Roast beef and turkey are raised to new levels with a melty slather of this cheese, but think about what it could do for roast lamb with spicy mustard, like Pommery’s Fiery Moutarde de Pompiers? That’s some serious sandwich.
