St. Malachi
St. Malachi
Description
Description
This savory Gouda/Alpine hybrid is one of Philly's most award-winning cheeses, and an American Cheese Society Best In Show recipient as well!
THE FLAVOR EXPERIENCE
Brown butter and hazelnuts and savory simplicity, oh my! This toothsome well-aged Pennsylvania tastes like toasty champagne, roasted nuts and buttered toast. A long aging period makes it crystalline and dense, but the buttery flavor notes go on forever and ever.
THE STORY
Located in Coatesville, PA, the Farm at Doe Run and Doe Run Dairy are dedicated to producing high quality milk which makes high quality cheese. Simple and sustainable agriculture is the name of the game in Chester County, and their 700-acre farm is a veritable heaven-on-earth for their herd of Jersey cows, as well as their East Fresian sheep and Nubian goats!
USAGE TIPS
One of the friendliest cheeses for pairing with beer (another PA specialty) pretty much ever, go for your favorite pale ale, IPA or porter. This is also versatile paired with fruity jams, savory mustards, or even with a bit of dark chocolate.
