The Third Day of Pairings — Cravero Parmigiano-Reggiano & Campari Balsamic Vinegar
For many, the King of Italian cheeses is undisputedly Parmigiano-Reggiano. Here at Di Bruno Bros., our favorite Parmigiano comes to us from Giorgio Cravero, an affinatore based in the town of Bra, in Italy’s Piedmont region. The Craveros have been in the business of selecting and maturing the best Parmigiano they can find for five generations. As you can imagine, with such a strong heritage they are sticklers for tradition, and take great pride in every wheel that bears their name. Only the best examples of these cheeses make it into and out of their caves! Cravero Parmigiano is aged about two years - enough to achieve the cheese’s characteristic firm texture and crystallization, but not long enough to dry out and lose the sweet, fruity notes that Giorgio strives for in each wheel. Enjoying Parmigiano-Reggiano with a drizzle of Balsamic Vinegar is an Italian tradition. This classic combo showcases two culinary jewels of the Emilia-Romagna region, and it’s a popular pairing both in our stores and in our homes. We love matching the caramel notes in Cravero Parmigiano with our favorite balsamic, the 15-year-aged vinegar from Lodovico Campari. This hearty, intense & sweet reduction undergoes a long aging period in wood barrels. The end result is a syrupy condiment with notes of chocolate, raisins, figs & toasted malt. Like we said - you just can’t go wrong with this combo!
