The Second Day of Pairings — Pecorino with Truffle Honey

The second pairing in our 12 Days of Pairings series harkens back to our Italian roots. One of our long-time favorites at the cheese counter is Grand Old Man, a pecorino from Pienza, a small village in Tuscany famous for their traditional sheep’s milk cheeses. (They even have an annual festival and cheese rolling competition called ‘Cacio al Fuso’!) Grand Old Man is made by the Putzulu family, who have a 50 year history of cheesemaking in Pienza. The recipe for this cheese was developed by the grandfather of the family, and thus is nicknamed after him! We love pairing this venerable, durable cheese with our private label Italian White Truffle Honey. After 15 months of aging, Grand Old Man’s paste is dry and crumbly, with a pronounced savory nuttiness and a definite kick of salt. The sweet honey evens out the cheese’s olive briney profile, while the infused truffle flavor lends an earthy punch to each bite. Serve this pairing as an appetizer to a hearty holiday meal, or as an afternoon snack!
