What you'll Need:

4 oz Gruyère (shredded)

4 oz Comté (shredded)

• 1 tsp cornstarch (the secret to a stable emulsion)

• 1 small garlic clove, halved

• ½ cup dry white wine (think Sauvignon Blanc or Pinot Grigio)

• ½ tsp lemon juice

• Fresh cracked

black pepper

• Pinch of nutmeg

(optional but very Swiss)

How to Make It Happen:

Prep the Pot: Rub the inside of a small saucepan or fondue pot with the cut garlic, then discard. This leaves behind a subtle, aromatic "kiss" of garlic without overpowering the cheese.

Simmer: Add the white wine and lemon juice and warm gently over medium-low heat until steaming but not boiling.

The Slow Melt: Toss the shredded cheese with cornstarch. Add the cheese to the pot one handful at a time, stirring constantly in a figure-eight motion. Ensure each addition is fully melted and smooth before adding the next.

The Finish: Once the mixture is glossy and cohesive, season with pepper and nutmeg.

Serve: Keep warm over a low flame and serve immediately with crusty baguette, cornichons, or crisp apple slices.

Pro Tip: If the fondue feels a bit too thick, add a splash more warm wine. If it’s too thin, keep stirring—patience is the key to get the perfect "pull."
