Goat Cheese with Black Raspberries & Honey Pops

Black Raspberry Sauce:

1 cup Black Raspberries 1/4 cup honey Pinch of salt Combine berries, honey and salt and bring to a boil. Remove from heat and cool completely.

For the Pops:

1.5 cups whole milk 1 cup heavy cream 2/3 cup sugar pinch of salt 1 tablespoon cornstarch 3 oz chèvre Combine milk, cream, sugar and salt. Bring to a boil and set to simmer while you combine the cornstarch with 2 tablespoons water to create a slurry. Whisk into hot milk. Remove from heat. Whisk in the goat cheese. Cool completely. Pour into the pop mold of your choice, and swirl a spoonful of black raspberry sauce into each pop before freezing.

Strawberry Rhubarb Lemonade Pops

1 3/4 cup water 1/2 lb rhubarb, washed and chopped into 1 inch pieces 3 tablespoon honey 1/2 cups sugar 2 cups strawberries, washed and sliced 3/4 cups lemon juice Combine rhubarb, sugar, honey and water. Bring to a boil, and simmer until the rhubarb is soft, about 10 minutes. Cool. Strain out the rhubarb, reserving the cooking liquid. Blend together strawberries, rhubarb and lemon juice. Whisk back into the cooking liquid. Adjust sugar to taste, cool, and freeze following instructions for your pop mold.

Lemon Blueberry Buttermilk Pops

Blueberry Sauce:

2 cups Blueberries ¾ cups Sugar Combine blueberries and sugar in heavy bottom sauce pan. Bring to a boil and then simmer until blueberries release juices and sauce thickens a bit.

For the pops:

1 tablespoon Lemon Zest 2 tablespoons Lemon Juice 3.5 oz Sugar 2.75 cups Buttermilk (not reduced fat) Combine the above ingredients and whisk until sugar is dissolved. Pour into pop molds, not quite to the top. Swirl in approx. 1 tablespoon blueberry sauce in each pop mold. Freeze following instructions for your pop mold.
