Grandeur Osetra (acipenser gueldenstaedtii) is harvested from the oldest sturgeon broodstock. This means these fish are 18-22 years old, giving them their largest grain size, most similar to the famed Beluga Sturgeon. Minimum grain size is 3.5 mm, and color varies from grey to gold to platinum.
