After the curd is cooked and molded, each cheese is brined before undergoing an extensive aging process in cellars where they are carefully brushed, washed, and turned. The aging imparts complex flavors, and the older specimens can closely resemble a young, sweet Parmigiano, making it an excellent choice for pairing with savory dishes.
