The Flavor Experience
Prized for their delicate, mildly sweet meat and tender bite, these warm-water Caribbean spiny lobster tails deliver a clean, refined flavor that's slightly less rich than cold-water lobster — making them a versatile, restaurant-quality centerpiece for any seafood preparation. The firm yet tender texture holds up beautifully whether grilled, broiled, steamed, or baked.
The Story
Sourced from the warm tropical and subtropical waters of the Caribbean Sea and Western Atlantic, Panulirus argus — the Caribbean spiny lobster — is a clawless species prized entirely for its tail meat. Wild-caught in accordance with regional fishery regulations and seasonal closures, each tail is humanely processed and individually quick-frozen (IQF) at peak freshness to lock in flavor, texture, and quality from sea to table.
Usage Tips
Thaw in the refrigerator 12–24 hours before use, or under cold running water for a quick thaw. Do not refreeze after thawing. Cook to an internal temperature of 140–145°F (60–63°C) until meat is opaque and firm. Ideal for grilling, broiling, steaming, baking, or poaching. Available in size grades: 4–6 oz (appetizers/twin-tail plates), 6–8 oz (standard entrée), and 8–10 oz (premium entrée).
