Since opening its doors in 1877, not much has changed over the last 140 years. Each form is still made by hand utilizing a secret rennet recipe specifically designed to bring the pain. Though mostly employed as a 'snacking cheese,' Auricchio provolone is a workhorse of the kitchen. It can be eaten as is but can also be shredded, breaded, baked or fried. Delicioso!

We travel 120 miles to buy this cheese at the Italian Market but this pandemic has limited our travel. I was thrilled to be able to order it online. And it came the day I needed it.
There are some things one should never live without, Auricchio Provolone is at the top of the list.
This is the best cheese I have had in along time. It's a little bite of heaven. Our family have being going to Di Bruno Bros for over 40 years and have never been disappointed.
This is the style and quality of cheese you would find in a specialty shop for twice the price. Scratch that, it is not the style of provolone you'd find elsewhere, because it is singular in its blend of sharpness, creaminess, potency and smoothness. The texture is ostensibly drier than most provolone and it has a slightly pungent odor, but on the tongue both texture and flavor smooth out harmoniously. I found this cheese by chance while living in Colombia, it was part of the oddball revolving door of imported stuff at Jumbo, the Chile-based supermarket chain. It looked appealing so I bought half a pound. I came back four days later and bought the entire block. You don't get cheese this good in this country! Even in a fat man's heaven like Philadelphia, this cheese is formidable. Highly recommended.
