The Flavor Experience

In our exclusive wash, the Cellars at Jasper Hill have added our Eden Ciders & Iapetus Wine Grape and Apple Cider to the brine solution that it’s bathed in periodically. Lactic and tangy with notes of cured ham and fresh apricot. Springy in texture now but expect an oozing, gooey paste with meatier, earthier flavor notes as the cheese matures and ripens. Limited availability- once it’s gone, it’s gone!

The Story

Ploughgate's original production was put on hold after a 2011 fire, but thanks to Jasper Hill Farm, the recipe was brought back to life to the delight of cheese lovers everywhere. This special edition of Willoughby is washed with our own Eden & Iapetus Apple & Grape Sparkling Wine, resulting in a unique and flavorful delicacy.

Usage Tips

Slice and enjoy with a sparkling cider or wine (visit our stores for our own release!) and a handful of fresh berries. 

About the Wine

A new entry to our collaboration wine series, this is a hybrid blend of pressed (by us!) wild apple cider, blended with white wine grape juice, co-fermented and aged on red grape skins. It’s juicy, bubbly and delicious and really tastes like a blend of hard cider and wine together, reminiscent of a Lambrusco in particular. Raspberry and pepper on the nose, full and fruity but with a dry finish. Find it at our Philadelphia-area stores & bottle shops!
