Moses Sleeper is named for a Revolutionary War scout who, along with compatriot Constant Bliss, lost his life defending the Bayley Hazen Military Road. Slightly spicy, savory jams find a perfect landing on Moses Sleeper. Try the Tomato Chutney from Tait Farms, and tie the spice and butter together with a rich, full-bodied Chardonnay. I wasn't sure if I liked this cheese at first. When I opened it, the outside was kind of weird. But the middle was great.
When I first tried this cheese, I was told it would taste like broccoli cheddar soup, and it blows my mind how accurate that is. I've also seen it described as mushroomy--I hate mushrooms, but I love this cheese. Buy this cheese; just make sure you wrap it well or your whole fridge will be...fragrant.
