Favorite Summer Dishes
Watermelon Mint Feta Salad
This is about refreshing as it gets! Local, summer watermelon gets dressed up with fresh mint and salty feta. Eat it for lunch, bring it to the beach, or serve it alongside some BBQ for dinner.
Ingredients
1 mini watermelon, cubed small
8 oz Lesbos Feta (or other fresh, in-brine fetas)
1 bunch of Mint, chopped
1 lemon, zested
Extra Virgin Olive Oil
Black pepper
Flaky sea salt

DIRECTIONS
In a large bowl, mix watermelon cubes, chopped mint, lemon zest and a few cracks of black pepper. Drizzle about a tablespoon of olive oil. Using your hands, break up the feta and mix in. Taste, and add olive oil, black pepper and flaky sea salt as needed. Serve cold with a glass of Vinho Verde!
