The whole process - from selection to harvesting to packaging - is carefully executed by hand. For the best results preparing rice, potatoes or pasta, first crush some saffron threads in a mortar or mash the threads with a spoon on parchment paper. Then, soak the crushed saffron in warm water for about 20 minutes. Add the saffron and water solution to a pot of heated stock, then add the rice, potatoes or pasta. For sauces or reductions, add the crushed saffron directly to the liquid and shake vigorously.
